Crafted using the traditional method of sparkling production, this sparkling pear was made to highlight the best of the pears from Core. The pears were basket pressed and barrel fermented to build complexity and balance the great natural flavours of the pears. After a secondary bottle fermentation,CORE-pear-al was left for 14 months to mature before disgorging. The sheer weight of aromas is balanced with lingering fluffy phenolics and enlivened by a fine persistent bead. This is the cider crafter’s way of saying “Yum, yum, yum!”.
